How do I start the eSignature wizard?

I am trying to delete one template and add a few others for the esignature message.  I found the instructions several times and it says to start the eSignature Wizard.  I can't find that in my program.  Where do I find that?

oopps.. I guess this posted twice.  My internet was giving me trouble.  Hopefully it didn't post more than twice.
