Does PS professional have a way to see\view\calculate the average fee per return charged?

The average fee YOU charged per return?
ProSeries doesn't include any type of billing or accounting module for keeping track of things like that.
I made a new Homebase view and changed the Column Headings to include only the client name and fee charged, used the adding machine to add up all the fees, then divided by the number of clients showing in homebase.
