As the owner of the firm, I have an EFIN. The individual I hired to assist also has an EFIN. Where do I enter his number?

If they are working for your firm as an employee they would need a PTIN but would use your EFIN.

Tools >Options > Preparers Info You can enter that preparers EFIN right in the same area where their PTIN other preparer info is entered, there's a line for it.
I believe that is a space for the E-file PIN number for the preparer, not their EFIN number.
