Don't you love a casserole. It's supper tonight and lunch tomorrow or Sunday.

You say casserole, we say hot dish.
Ironically I'm put off by the term casserole. Cheryl has to trick me by referring to it as a "pie" instead. She has a Mexican Tater Tot "Pie" that's pretty yummy.
I might one day be talked into a Hot Dish but I'm not far enough north for that. 🙂

CostCo rotisserie chicken... John & I can get many meals outta one.
Just chicken with smashed potatoes & gravy from the juices.
Chicken sandwiches
*Everything* salad with chicken chunks for protein.
Chicken Tacos
Pizza - chicken, onions, bell pepper, olives, artichoke hearts.
Freeze the caraccas & eventually make broth (many uses...) for us, and for Juno's *pup-sicles*
I have to check regularly to make sure I haven't sprouted feathers & a beak.
Now I wish there was a Costco close by
The closest one is an hour away... we keep one in the freezer. At $ 5.99 - it's amazing. CostCo loses money on every one they sell; but they bring folks in. Those folks spend money on other items that DO make money. We call it the $ 100 Club as it's hard to leave without spending that much.
Tator Tot casserole? I've never heard of it.
As Jeff said, in Minnesota it is called Tator Tot Hotdish, which is a popular item. 😀
