I don't seem to be able to select e-File for Maryland Fiduciary Form 504 or 504E?

Correct. MD does not allow them to be efiled.

The more I know, the more I don't know.

Thank you.  I am painfully aware of that now.  I had thought that was going to change with the COM's modernization effort but apparently not.
