If I already prepared, but did not yet file, a 2019 S-Corp return and now did an Amended 2018 S-Corp Return and want to roll over the data, do I have to delete the 2019 or is there an easier and more efficient way of doing this?

Why would you delete a return that you have complete? Just fix the things affected by the prior year amended return and go on with life.
