1. On the dashboard, click on the Clients icon on the left panel.
2. On the line for the client you want to edit, click on the dropdown box that says "View client & returns" and select Edit Client.
3. In the popup box, edit your client's email address.
Note, however, that this will not change the email address shown within the return. Nor will this change the email address for an existing Link invite that had already been accepted. On the other hand, if you have not yet invited your client to Link for a particular year, the updated email address is where the invite will be sent.

Is it possible to change an email within the Intuit Link tab?
I had a client call for a copy of their 1040 so I went to "File a Return", did a partial print to send them their 1040, then clicked "Share PDF to Link." It got sent to the email in Link and NOT the email associated with them as a "client." The problem is their email has changed so they are not going to get the page if I can't edit their email within "Link."

@cakeen It would be best to post a new question, rather than adding on to an existing one. I believe the answer is to UNinvite the client, then send a new invitation to the new e-mail address.
