I created a filter for clients who had filled their tax return prior to the fix for unemployment benefits. Now I cannot open that filter to see who is in it. Can anyone help?

Add Processing date to the display (Settings > options > Display >...)
Then use Filter > Modify Filter > Add > I named mine UI> OK > Groups > I named mine UI is YES > OK > on the right Add > Income: Unemployment: is at least: 1 (see image) > OK > OK > OK
You should now see that filter in the lower left, click it to see who has UI. You could also add a filter to include the Processing Date, but I don't know if I would trust it.
