All the information is still there in the Input section, but if I preview the forms or go to file the return, every page says the "form is not available for this release."

It is because the form is not available for this release.
Try using 2022 instead of 2023 to learn the input and see the forms. 2023 is fresh off the presses and is not yet ready for prime time. If you go to IRS to view forms, many are not available or are in draft version.
