How can I make appear or print "Extension granted to due date/ Extension granted to 10/15/2018" on the header of 1040.

Technically, the extension is automatic so long as a F.4868 is filed by the due date with the proper amount of tax estimated.  There is nothing to be "granted" per se although the IRS could certainly send your client a notice to terminate the extension.

In the old days, when all extensions were filed on paper, taxpayers may still get an acknowledgment with a stamp from the IRS but not anymore.

Why would you want to do that?  It is not necessary.

If you must, go to General > Misc. Info./Direct Deposit > Miscellaneous and use the line for "Form 1040 text".
