Is there a way to mask social security numbers on the client copy included when requesting e-signature?

I would doubt it. I think part of the e-sign process is implicitly putting it on them to review the SSNs and confirm that they are correct.

My process is to put a redacted-SSN copy into my portal (TD) for their download. Then unredacted goes out with DocuSign. I tell my clients about the difference and make sure they know so they can decide which version they want to retain.  For the ones who will just lazily keep it in their downloads folder or email it to a lender for a refi, I want them to be "encouraged" to only hang onto the redacted one.
