If you delete or change an EIN/SSN then you wouldn't be amending anything, you'd be filing a new return.
Maybe you should provide a few more details about what you're trying to accomplish.

Business returns you can...but you don't want to make a copy and try to Efile an amended return that's a copy...you want to make a paper or pdf copy to keep, then amend the original and Efile it.
