I dissolved my S-Corp in 2020 but received a 1099-Misc for it for 2021 for some work I did for the corp in the first week of January? What should I do? Thanks!

File a 2021 1120S and report the income.

Why did you do work for it if it was dissolved?

I can see a client paying you after the end of the year, but a "-Misc" isn't for "some work;" it's for some other reason. Would it be personal, and they put the wrong ID on it? You can get that corrected; send them a W9 and point out the issue.
