Does Proseries create an EIN for you when you buy product and give your name as business name? I don't believe I've ever applied for an EIN since I never have had employees.

May I erase EIN for paper filed return. Since it's likely not an valid EIN?

If it's not yours and it's not required, I'd remove that but find out from Intuit how it got there in the first place assuming you did not enter that.

Only the IRS can issue an EIN.

What Intuit issues is a CAN (Customer Account Number). EIN is what only the IRS can issue, as Anna says, and something you have to enter into your firm's account information if you want that to be shown on the returns you prepare.
