Right click on the field that is a guestimate/or pending & tag it with "missing info".

When you go to diagnostics, there's one about "missing info" that you can click on to generate a report to print and/or email to the client.   And I think there's also a tab on the upper menu bar to get to the "missing info" report. (edit... it's the 7th one from the right...)
