A few months after client's form 1040 (and CA form 540) were filed, he received an unexpected K-1 from a Liquidation Trust. Should I redo the client's 2019 return completely, or is there a way to amend the existing file and re-submit it? Have never encountered this problem before. Thanks for any assistance.

If the K-1 is for 2019, and it affects the tax filing(s), then that's why you would amend something. You don't "redo" the same form already submitted; the 1040 is Amended by using 1040X to show what is changed.
