Can I change the federal filing due date on the letter due to Texas snow storm?

 Sure,,,,       Save a Client Specific letter( unless all your clients are in Texas,,in that case edit the Standard letter).    then look for this in your letter                       <@FDIDate>               whereever you see that, just backspace it away and type in                                   June 15, 2021.
